Tomato fruit contains endogenous polygalacturonase (EC 3.2.1.15) that dopolymerises the pectin. Because the quality of these fruits and also of processed tomato products depends on the extent of pectin degradatin it is importan to know how polygalacturonase activity exolxes during ripening. The study was carried out in a glasshouse, using different tomato varieties. Together with polygalacturonase activity we determined the content of reducing sugars and the total amont of organic acids. These parameters were correlated with the cultural conditions , meaning temperature, light and nitrogen content of fertilizers.
