Tolerance to low temperature and low oxygen is critical in maintaining postharvest apple fruit quality. The reasons for tolerance are still not properly understood, and current research tends to concentrate on specific genes or biochemical and physiology responses. We have investigated the cellular responses in terms of a programmed cell death model, following specific populations of cells, nuclear DNA changes and associated changes in gene expression. The protective effects of a heat treatment on low temperature cell death, and responses to high acetaldehyde concentrations produced under low oxygen with inhibition of alcohol dehydrogenase, have been followed by flow cytometry, and analysis of enzyme activity and gene expression.
