บทคัดย่อ
Total volatile bases (TVB) is an important quality index of freshness of fish. Steam distillation and Conway’s micro-diffusion methods are generally used for estimating TVB. This report is concern with a comparative study of these two methods mentioned. The results showed that TVB – mg. N/100 g. fish by Conway’s micro diffusion method is only 57% of the value obtained by the steam distillation method, and the correlation coefficient is 0.83 which shows a satisfactory relation. By using standard solutions of ammonium chloride in varying concentrations, it was found that the steam distillation method gave good recovery percentages for every concentration. Conway’s micro diffusion method gave high recovery percentages of low concentrations of ammonium chloride only. However, Conway’s method, over the range of values found in spoiling fish, gives satisfactory recovery percentages and the two methods show no difference in accuracy. one can select the method most appropriate to the working conditions under which the analysis is to be made.
