A review with 11 references. The polymerase chain reaction (PCR) is a rapid molecular technique which can be used for the detection of microorganisms in food. Serveral diagnostic PCR systems based on gene of the biosynthetic pathways of aflatoxins and trichothecenes as target sequences have been described. (In German).
