Fifty samples of cereals including wheat, barley and corn were analysed for DON. Water activity (aw) and mycoflora levels were also investigated. The highest level of infection (12-80%) and the highest count of total moulds were detected in wheat samples, while the highest levels of Fusarium species were detected in white corm. DON was found in wheat and barley samples but not in corn. The wheat red winter soft samples showed the highest levels of DON (3.2 mg/kg). There was no correlation between mould count, Fasarium species, infestation grade, aw or DON levels. (In Spanish).
