The effect of gamma radiation on aflatoxin production by Aspergillus flavus in maize with different over a 15 day period. The viability of A.flavus on maize decreased voer time with increasing moisture contents and storage at 8oC. Levels of AFB1 produced by A. flavus were 10mg/kg in the maize stored at 8oC after 45 days. Production of aflatoxin was highest at 40% moisture and 28oC. Irradiation of 1.0 or 2.0 kFy greatly reduced the level of mould growth relative to mon – irradiated controls. A dose of 4.0 kGy eliminated all viable fungi. AFB1 production decreased with increasing levels of irradiation and was negligible at 4.0 kGy.
