Storage stability of guava leather in different packing materials

Guava leather was prepared as per F.P.O. specification and the effect of different packing materials viz. polypropylene (PP), butter paper (BP), metalized polyester polyethylene (MPP) and aluminum foil (AF) were evaluated for testing stability of the product during ambient and low temperature conditions (10 ±1°C). Composition of guava leather has also been reported. The samples stored in MPP retained higher percentage of nutrients and minimum microbial counts at the end of storage period. Reducing sugars increased while total sugars decreased during storage under both conditions. Organoleptic rating was also higher for the samples stored in MPP pouches. However, packing in PP sheet was found to be more economical as compared to other packing materials. Although guava leather can be stored up to three months at room temperature but quality was not comparable with the leather stored under low temperature.
