Uneven fruit ripening is often found in Mon-Thong durian. This defect can not be detected from external appearance, and its cause is unknown. It was suggested that perhaps too early harvesting and leave flushing were the most probable causes· of the problem. To establish this, Mon- Thong durian fruits were harvested at the various maturity stages. The immature fruits were found to have the higher score of uneven fruit ripening, and higher variation in pulp firmness, dry weight and soluble solids content. In addition, to determine whether food competition between fruit and other developing parts such as the flushing leaves was also related to uneven fruit ripening, bearing durian trees were shaded by 50%, using Saran net at 99-105 day after anthesis (DAA). It was found that the fruit from shaded trees, harvest at 106 DAA, had higher uneven ripening characteristic than that from the control tree. It was also found that treating the fruits with high concentration of ethephon could not alleviate uneven ripening symptom as a whole, but could reduce uneven ripening within the same locule.
