The changes in the quality and postharvest physiology of harvested pineapple were studied, including the color of peel and pulp, firmness, flavor, rate of respiration and ethylene release. The activity of enzymes and their genes expression relating to ripening and senescence were also studied. The storage life and ripening could be evidently delayed by the treatment with wax or 1 -MCP and the quality of the fruit cold be effectively kept.
