Correlation of internal gasses, ethanol content and alcohol dehydrogenase activity during storage of tangerine fruit coated with commercial coatings
Nine commercial coatings (CITRASHINE, SEALKOTE, FOMESA, ROSY PLUS, CITROSOLAK, SUPERSHINE-C, ZIVDAR, PERFECT SHINE, and unknown WAX) were coated on tangerine fruits cv. Sai Nam Puang and then stored at ambient temperature (23±3°C) and 56±5% relative humidity for 7 days. Coated tangerine fruit with ZIVDAR had relatively high internal O2 and low internal CO2 and ethanol content. High ethanol content has been correlated with low internal O2 and high internal CO2. Coated tangerine fruit with ZIVDAR had the highest alcohol dehydrogenase (ADH) activity. Coated fruit with commercial coatings had gloss that relatively stable during storage. Coated fruit with CITRASHINE and SEALKOTE has the highest gloss.
