Postharvest quality and color development on off-season rambutan fruit (Naphelium lappaeeum Linn.) cv. Rongrien in southern, Thailand

บทคัดย่อ
The colour of rambutan fruit (Naphelium lappaceum Linn.) cv. Rongrien during off-season in Nakhonsrithammarat, southern, Thailand changes from green to red during ripening and is used to judge maturity with grading. Fruit at different stage of maturity as light greenish to dark red peel were harvested and kept at 25°C (85-95% RH). During the postharvest ripening period, hue angle values, peel firmness and titratable acidity (TA) decreased significantly, while a* value and total soluble solid (TSS) increased. Anthocyanin contents was observed in peel and significantly increased to maximum at the final colour stage.
