Quality of starfruit harvested at advanced maturity stage

บทคัดย่อ
A study was carried out to compare the quality of starfruit harvested at commercial maturity or colour index 2 (fruit colour is light green with tinge of yellow) with those harvested at an advanced maturity stage or colour index 4 (about 50% of fruit surface had turned to a golden colour). Fruit of advanced maturity showed better colour, chemical compositions and sensory quality as compared to those harvested at the commercial stage. The advanced maturity fruit could be stored for up to 8 weeks at 8°C.
