Harvest maturity related changes in the content of endogenous phytohormones and quality parameters of melon

Melons (Cucumis melo L. cv. Alpha) were picked at two (E2), five (E5) and ten (E10) days before the estimated ideal time for commercial harvest. Differences in the lag time before the initiation of significant ehtylene production and in maximum ethylene production rates for fruit from the three maturity stages were found. Both 1-aminocyclopropane-1-carboxylic acid (ACC) and malonyl ACC (MACC) levels rose in fruit as maturity at picking increased, but ACC oxidase activity in the flesh was greatest at E5. Dry matter levels and soluble solids were generally in line with ethylene production. Abscisic acid (ABA) levels were complementary to ethylene production, ABA content and compositional factors are discussed.
