Effect of ripening on the parameters of three stress relaxation models for banana and plantain.

Ethylene-treated and non-treated bananas (Musa AAA group) and plantains (Musa AAB group) were stored at various temperatures ranging from 13 degrees C to 25 degrees C and 90% relative humidity for eight days. Cylindrical samples, that were obtained from the fruits removed from the storage on daily basis, were subjected to a ramp-step compression. The stress was allowed to relax for eight minutes. Data were fitted to three models: Model 1, generalized Maxwell; Model 2, Nussinovitch; and Model 3, Peleg. Generally, all the models predicted the stress-relaxation behavior of the fruit pulp reasonably well. However, Models 1 and 3 provide better interpretation of the results. Hard banana and plantain exhibited higher relaxation time constants than softer pulp. Ethylene-treated pulp relaxed the stress much faster than non-treated pulp. On the average, bananas had a higher relaxation time constants than plantains.
