Physiological responses of red delicious apples during controlled atmosphere storage.

A three-year project has provided previously unavailable physiological activity data for Pacific Northwest Red Delicious apples held in typical commercial controlled atmosphere storage conditions. Recorded data indicated that respiration rates were lower than previously reported. Reducing the oxygen concentration from 2% to 1% caused a decrease in respiration rate of stored Red Delicious apples by approximately one-third while CO2 and temperature were held constant at 1% and 1 degree C, respectively. Increasing CO2 to 2% while temperature was maintained at 1 degree C also reduced respiration activity, but to a lesser extent.
