The ground color development process for ripening 'Redglobe' peaches, in terms of hue angle, can be described with good certainty (R2 = 0.8394 - 0.9731) by Oth-order kinetics, with a change rate varying as a linear function of storage temperature. This model, although derived from constant temperature tests, was found to be applicable for use under variable temperature conditions within the same season with an average error of 2.5%. The same kinetics model was found to apply for both 1987 and 1989 seasons, but with different kinetic parameter values. This result suggests that fruit from different seasons may have different susceptibilities to temperature exposure, although their overall responses are similar.
