A forced-air precooler to rapidly cool fresh spinach in large bins was designed, constructed, and tested. Airflow, spinach mass, and cooling time were measured and recorded for several test runs. The mean seven-eighths cooling time or the time to reduce the initial product temperature to seven-eighths of the desired holding temperature for 10 tests was 3.92 hours. A comparison of airflow rates and cooling time was made, but further research is required to verify the relationship.
