Postharvest technology in Japan is discussed under the headings: year-round production and supply of vegetables, shipment standards for vegetables, pre-cooling, and marketing channels. The basic postharvest physiology of vegetables (respiration, transpiration, and biochemical and chemical changes) is described, and the major factors influencing vegetable quality after harvest (handling procedures, temperature, relative humidity and atmosphere) are considered. The results of a recent study on the effects of various controlled atmosphere conditions on quality of broccoli during storage are presented graphically; storage in 2% O2 + 10% CO2 + 88% N2 at 15 deg C gave the best results.
