A review of current information on the postharvest physiology and handling of kiwifruit, with reference to its respiratory pattern, physical characteristics, changes in carbohydrates and ascorbic acid during storage, maturity indices and recommendations, deterioration (softening) during storage resulting from ethylene exposure, handling injuries and recommendations, postharvest diseases (particularly Botrytis cinerea) and their control, storage temperature, weight loss during storage, cooling techniques, storage (in air, modified atmospheres and controlled atmospheres), ripening procedures (using ethylene), and distribution.
