Postharvest quality of supersweet corn cultivars.

Postharvest quality of sh2 (shrunken endosperm) sweetcorn was compared with that of su1 (sugary endosperm) sweetcorn. In general, sh2 sweetcorn was tolerant of less than optimum handling practices in terms of sugar loss but water loss and increases in pericarp content were limiting factors during the postharvest period. Sugar content declined more in su1 cv. Silver Queen (from 4 to 1%) than in sh2 cv. Florida Staysweet (from 6 to 4%) when harvested into a water-ice slurry and held at 50 deg F for 4 days. There were no sugar losses in either when the holding temperature was 34 deg F. In trials of 26 supersweet cultivars and lines in 1989, ears were hydrocooled after harvest, held in crates at 40 deg F and evaluated after 9 days. Of the 5 bicolour cultivars, 3714 was best for appearance, while 3009 was the best yellow cultivar. However, both these cultivars had the lowest sugar content in their respective groups. Sugar content was highest in Candy Store (9.8%) among the bicolour varieties and in Sweetie 82, which has both sh2 and su1, among the yellow varieties (11.5%). Highest pericarp levels appeared to be in cultivars with low sugar levels.
