บทคัดย่อ

Biodeterioration problems in the Brazilian sugarcane-alcohol industry.

The processing of sugarcane to produce alcohol is described. It comprises 4 stages - harvesting and transporting to the factory, juice extraction and must preparation, fermentation, and distillation - the first 3 of which are subject to contamination and biodeterioration. The bacterial and fungal contaminants affecting each stage are reviewed, with the problems they cause. The treatment and prevention of contamination are discussed. Carbamate compounds are the biocides most frequently used, as they control contaminating bacteria without affecting the fermenting yeast, and are not hazardous to the workforce or environment.
