Post harvest changes in invertase activity and juice quality in sugarcane.

Sugarcane cv. Co. 1158 was harvested, detrashed and stored under the trash cover. Samples were taken every 72 h up to 360 h, and the juice was analysed. Graphs show that activities of acid and neutral invertases were low at 72 h, but from then onwards increased rapidly. Contents of reducing sugars and total soluble solids increased progressively; sugarcane weight, extraction, juice purity and commercial cane sugar decreased progressively. Preharvest foliar application of mercuric chloride or cobalt chloride [amounts not stated] eliminated invertase activity up to 20 days after harvesting, and led to less deterioration; juice pol and purity, initially 19.09 and 91.34, respectively, decreased to about 18.1 and 74.5 in 20 days after either of these treatments, compared with 16.6 and 68.7 in untreated controls. Preharvest foliar application of sodium lauryl sulphate, sodium metasilicate or sodium malonate was ineffective.
