Changes in qualitative components of two melon cultivars during maturation.

Fruit quality characteristics were determined in the netted cultivars Green Wave and Natsukei 6 Gou at 35, 40, 45 and 50 days after pollination and also for fruits stored for 5 days after harvest at 50 days after pollination. Fruit size, weight, deg Brix and sugar content increased with maturity but there was no significant increase during postharvest storage. In general the acid content declined with advancing maturity but there was a marked reduction during storage. The total amino acid content rose significantly until 50 days after pollination, but fell during storage. The cultivars differed in almost all qualitative characteristics. Fruits of Green Wave were generally sweeter and more juicy than those of Natsukei 6 gou, due to higher sucrose and amino acid contents.
