Harvesting procedures, processing green seeds, dehulling operations and storage practices for pigeon peas are reviewed. The section on processing green seeds includes information on canning, shelling, cleaning, blanching and freezing. The dehulling operation is usually performed in 2 steps; the first involves loosening the husk from the cotyledons, and the second involves removing the husk from the cotyledons and splitting them using a roller machine or stone chakki (quern). Quantitative and qualitative losses which occur during dehulling, the effect of pretreatments on dhal yield, and the effect of dehulling on nutrient losses are described. Storage pests, storage losses, methods of storage, the effect of storage on cooking quality and chemical constituents, and future research needs are outlined.
