Asparagus production in the 7819 ha of Peruvian coast devoted to this crop is described. Asparagus is the most important export vegetable; it is marketed as canned, fresh or frozen produce. Year-round production is possible due to favourable climatic conditions; enforced dormancy by withholding irrigation for 1-2 months allows two 6-month crop cycles per year. Factors influencing productivity are described including cultivars, planting density, soil type, fertilization, irrigation, pests and diseases, harvesting and postharvest handling.
