The quest for quality.

In recent years there has been a demand for the supply of high quality mushrooms in the UK market and this has become a challenge to the producer. The quality of mushrooms is affected by colour, cleanliness, texture and freedom from blemishes. To achieve this high quality the following aspects are highlighted: choice of strain type, the number of flushes harvested, casing materials, watering, CO2 levels, hygiene, picking and postharvest management including cooling, packaging (especially modified atmosphere packaging), quality control, irradiation and washing. It is suggested that there is no easy way or single step to ensure that mushroom production is of high and consistent quality. It is emphasized that the status and importance of quality should be made equal to that of productivity in the management of the farm.
