Sorghum and millet processing and utilization in the Southern Africa Development Coordination Conference area.

The principal staples consumed in the Southern Africa Development Coordination Conference (SADCC) region are cereals. This paper examines the processing aspects of the utilization of sorghum and millet, and their interaction with the food security of the SADCC region. The three main small grains grown in SADCC are sorghum, pearl millet, and finger millet. For each of these the paper looks at nutritional composition, processing technologies, food products, competition and research and development.
