Refrigerated storage of breadfruit and the effect of waxing, packaging and storage in water.

The postharvest behaviour of breadfruit (Artocarpus altilis) stored at 8, 12, 16 and 28 deg C for 25 d is described and the effects of waxing, packaging and storage in water are examined. Fruits held under ambient conditions (28 deg ) were stored for up to 8 d. During storage, physical (weight, vol., sp.gr. and firmness), chemical (total soluble solids, pH, m.c.) and sensory (skin and flesh colour, acceptability based on firmness and odour) characteristics were evaluated. The most successful treatment was waxing which potentially could extend the marketable shelf life to 18 d at 16 deg .
