Mature green apples, harvested 117 days after full bloom, were irradiated 5 days later or after 1-3 months' storage at 3 deg C with daylight fluorescent lamps (21 and 30 W/cm2 for 72 h). Following irradiation, peel anthocyanin concentration was 20 nmol idaein/cm2 compared with 5 nmol for the controls. Treated fruits were a uniform bright red compared with controls which were green with a trace of red. The potential to synthesize anthocyanins persisted during storage at 3 deg for up to 3 months. Irradiation increased TSS, while flesh firmness and malic acid levels decreased.
