บทคัดย่อ

Effect on potato bruising of physical and chemical properties.

Bruise classifications, black spot definitions, various bruising identification techniques, and properties are described. Production of black spot depends on the variety, fertilizer application, impact or pressure force, soil conditions, tuber temperature, tuber turgidity, tyrosine, chlorogenic acid content and pH. Careful harvesting and postharvest handling at all stages of tuber movement and tuber temperature controls are the most important criteria for black spot prevention.
