Changes in ACC content and EFE activity of peel and pulp of 'Jonagold' apples during pre- and post-harvest periods.

Ethylene production in Jonagold apples was low from 60 to 140 days after full bloom (DAFB) but increased rapidly after harvest (150 days DAFB) when the fruits were kept at 20 deg C and 90-95% RH, peaking 20 days after harvest (170 DAFB). Ethylene-forming enzyme (EFE) activity in the peel and pulp was low during the early growth period but increased between 130 and 160 DAFB and was high during storage at 20 deg for 20 days. EFE activity was consistently higher in the peel than in the pulp. ACC contents of the peel and pulp during fruit growth and maturation on the tree were low compared with levels during the postharvest period. Trends in ACC content paralleled those of EFE activity and ethylene production.
