Fibrousness of white asparagus varieties.

Fibrousness in 8 asparagus varieties was analysed by determining cutting distance, date of harvesting, postharvest storage and the correlation between cutting force and fibre content. Steline required the least cutting force and had the lowest fibre content; intervarietal differences were most marked in the portion of the leaf stalks farthest from the tip. Blanching had the least effect on fibrousness in Darbonne 3 and Darbonne 4. Intervarietal differences are maintained after storage for 3 days at 10 deg C and 98% RH. The closest correlation between stalk cutting force and fibre content was found for Largo Calahorra.
