Postharvest biochemical and microbial changes.

Topics reviewed include: degradation of organic phosphates and carbohydrates; rigor mortis; changes in nitrogenous compounds; degradation of lipids; microbial contamination and spoilage (the microflora of fresh seafoods, growth of bacteria on seafoods and bacterial activity and spoilage); the functional properties of fish meat; changes in sensory properties; and the assessment of freshness of seafoods.
