Results of trials aimed at developing a practical maturity standard for litchis are reported. Fruits from 9 cultivars at various maturity stages were collected from many commercial production areas. The Brix:acid ratio of the pulp correlated well with mean eating quality. Cultivar variability, growing region and seasonality had a significant (p >0.05) although minimal effect. A Brix:acid ratio of 30 to 40 (calculated to give an eating quality value of 5 to 6) is recommended.
