Ethylene production in the 'Carabao' mango (Mangifera indica L.) fruit during maturation and ripening.

Carabao mango fruits exhibited softening and yellowing of the pulp before harvest maturity was attained. Although ethylene production in the fruits remained low through the later stages of maturation, a peak was observed about 10 days before harvest maturity. During ripening, fully mature fruits exhibited 2 additional peaks: at colour break and when the peel colour was almost fully yellow. Further examination of ethylene production revealed differences in patterns among the inner and outer portions of the mesocarp and the peel.
