บทคัดย่อ
The position of rice as a world food crop, its main characteristics and postharvest problems are described. The chemical composition of the grain, its nutritional value and nutritional deficiencies associated with its exclusive intake are reviewed. In spite of deficiencies as a complete food it is calculated that rice output must be doubled in the next 25 to 30 years simply to keep pace with population growth.
