บทคัดย่อ
The experimental and theoretical aspects of sorption phenomena in cereal grains and oilseeds are reviewed. Sorption isotherms can be interpreted as macroscopic representation of water interactions with grains. A discussion on modelling of sorption phenomena is given. The review and the concluding remarks include a global view of the state-of-the-art of equilibrium moisture content (EMC) - equilibrium relative humidity (ERH) relationships of cereal grains and oilseeds.
