Comparison of N, lipid, starch, soluble sugar, organic acid and ash contents of kiwifruit (cv. Hayward) berries sampled at regular intervals between flowering and harvest from orchards near Davis and Fresno (in the central valley) and near Watsonville (on the coast) indicated that fruit composition in the 2 central valley sites was similar but was considerably different from that on the cooler coastal site. In particular, sugar:acid ratios were consistently higher in coastal fruits. It is suggested that sugar:acid ratios should be added to current fruit maturity standards and could be used to evaluate eating quality during postharvest storage and handling.
