Postharvest ripening of fruits of the cultivars Comice [Doyenne du Comice], Conference, Gute Luise [Louise Bonn], Packhams [Packham's Triumph] and Kaiser Alexander was assessed in a 3-year study. The pears were stored at 0 deg C and ripened at 20 deg . They were ripe for eating 5 days later, but Gute Luise and Kaiser Alexander sometimes failed to reach optimum sensory quality. The postharvest ripening behaviour of Comice, Conference and Packhams was usually satisfactory. Average sugar contents were highest in Comice and lowest in Packhams.
