Dacryodes edulis fruit is very delicate with postharvest losses of >50% in parts of the Congo. Solar drying is the only preservation method used by the local population, yet the resulting products are of variable quality. The variation of residual water in the pulp and of the acid index, as well as oil colour were studied in order to establish the effect of drying on product quality and to improve the traditional methods. Oven (70-90 deg C) and solar drying yielded identical products despite slight differences observed in the dehydration process. The resulting product was of acceptable quality: moisture content <10%, acid index generally <4, optical density of 0.3 at 400 nm in a solution containing 25g oil/litre cyclohexane.
