บทคัดย่อ

Fresh fruits and vegetables ready to use: group 4.

This sector of the food processing industry, largely made up of salads in the form of washed, chopped and packed vegetables, has established itself in recent years in the countries of the European Community. An account is given of economic aspects, the preparatory process used, and the preservation of the product, including physiological and microbiological aspects, enzymatic browning, the cold chain and quality control. Technical details and quantitative examples are given.
