The physiology and biochemistry of fruit respiration are examined with respect to fruit quality and prolonging postharvest storage and shelf life. Comparisons are made between a strongly respiring fruit, avocado, and a weakly respiring fruit, apple. The respiration of these fruits is related to the structure and function of their mitochondria, the operation of the cyanide-insensitive pathway, accumulation of CO2 in the intercellular space, CO2 diffusion within the pulp and CO2 (re-)fixation via phosphoenolpyruvate carboxylase.
