SpawnMate II (4.2% lipid) applied at spawning as a nutrient supplement increased the yield of mushrooms, while safflower oil applied at casing reduced mushroom yield. Nutrient supplementation did not affect solids, lipid, 1-octen-3-ol content, or fatty acid composition of mushrooms. Supplementation at casing resulted in better colour for the first 2 flushes of the crop cycle. The 1-octen-3-ol content of mushrooms decreased during postharvest storage. Nutrient supplementation also reduced the degree of browning and the rate of maturation during postharvest storage.
