Ready-to-eat (or Grade IV) salads refer to salads packed in sealed containers. The definition of Grade IV, which is of French origin, indicates the fourth form of trading, preceded by fresh, canned and frozen forms. The production technology associated with Grade IV salads, characteristics of the products (pack atmosphere, storage temperature and film characteristics) and microbiological aspects are described.
