บทคัดย่อ
Borax was applied to apple cv. Fuji trees in 2 orchards at 10-500 g/tree. Polyphenol oxidase (PPO) [catechol oxidase] activity was determined in the fruits during storage from 15 Nov. to 22 Feb. Increasing levels of B increased total and specific PPO activity during storage. There was a strong positive correlation between PPO activity and internal browning. PPO activity was greater in the core of the fruit than the flesh. Five isoenzymes were detected using polyacrylamide gel electrophoresis, 2 of which stained more intensely at higher levels of B.
