Harvest maturity, pear storability and ripening properties of Passe Crassane fruits were investigated in 1984 and 1986. Evaluations were based on flesh firmness, soluble solids content, ground colour, pH, titratable acidity, skin content of major pigments, starch disappearance and quality criteria. Three harvests were made in 1984 and 2 in 1986, between the end of Sep. and the end of Oct. The starch (iodine) test was shown to be practical and dependable and could be used alone for determining harvest maturity. Flesh firmness and total soluble solids were complementary. At ideal harvest maturity, the iodine test scale was No. 7. A firmness rating of 5.9-6.3 kg and soluble solids content of 15-16% were required for long-term cold storage. At 0 deg C with 90-95% RH, under conventional storage conditions, the maximum storage period was 4-5 months. Longer storage was restricted by the development of excessive fruit rot, scald, core breakdown [brownheart] and (most importantly) internal browning.
