A technique is presented for predicting the proportion of product which will be likely to sustain damage in a particular postharvest handling system based on the output data from an Instrumented Sphere (IS), and known bruising response from laboratory tests. The prediction model is based on the Poisson distribution and accounts for the distribution of typical impacts at each transfer, and the probability of fruit sustaining damage for each given impact. Drop tests were conducted using the IS and two apple varieties onto five typical surfaces to determine the bruise probability function. IS evaluation of several transfers was conducted to demonstrate the model.
