Calcium content and occurrence rate of calcium-injured fruit by several methods of postharvest calcium infiltration in apple fruits.

Tsugaru, Jonathan and Fuji apples were treated with 2, 4 or 6% CaCl2 by dipping, pressure infiltration (60, 80 or 100 kPa) or vacuum infiltration (32, 40 or 48 kPa). The apples were stored at 4 deg C and assessed for Ca injury (calyx burn, skin fleck and core decay) and Ca concentration (2 and 4% treatments only). Dipping had no effect on fruit Ca concentration but pressure or vacuum infiltration significantly increased Ca concentration, more so with 4% CaCl2 than with 2% CaCl2. The concentration of CaCl2 solution applied had a greater effect than application method on fruit Ca concentration. Ca-injured fruits were observed for all treatments except 2% CaCl2 dipping in Tsugaru, and 2% CaCl2 dipping 2% CaCl2 pressure infiltration (80 kPa) in Jonathan. In Fuji, calyx burn was absent in all treatments except the 6% CaCl2 treatments, no fruits showed skin fleck, but core decay occurred with all treatments except dipping in 6% CaCl2.
