The introduction to this review discusses the need of N fertilization for high yield production, the influence of N on nitrate accumulation in the crops, and various other adverse aspects of N treatment. The effects of N fertilizer source and form are examined and the activities of organic and inorganic N compared. Besides N source, time and method of N application, soil conditions and climate, plant species and cultivar, and methods of harvesting and postharvest handling (including storage and further treatments) also affect nitrate accumulation and content. Safety limits for nitrate content are listed for carrots, lettuces, radishes, cabbages and some other vegetables.
