Impact bruise resistance of peaches.

The effects of ripeness, drop height, and fruit drop orientation on firmness, bruise vol., and various impact parameters were determined for peaches in order to improve prediction of postharvest bruise resistance. Parameters for impact on a flat hard surface were identified which were correlated with recognized measures of bruise resistance. Most of the impact parameters changed with ripeness. It was found that skewness of the force versus impact curve was related to fruit ripeness and independent of fruit mass and drop height and that at constant drop height, ripeness was related to time-to-peak force (F/T), percent absorbed energy, and skewness. Ripeness and drop height were highly correlated with the percentage of fruit bruised and bruise vol.
